If your kiddos are anything like mine, getting them to eat healthy can be a struggle.
I had planned on making the cookies for me. I’m trying to greatly reduce my sugar intake (except for fruit), and found these cookies sweetened only by dates and bananas.
My boys love to help me cook, so they were quick to come running when my Ninja came out. Once they had helped me mix them, they of course had to try them. I really didn’t expect them to like them, but all of my kiddos downed them and asked for more. There are very few things that all four of my little ones like, so I was impressed!! The downside, there wasn’t a lot left for me to store away. We just had to make some more another day. Oh well!!!
So how to make these yummy, but healthy cookies.
1/2 cup of dates (I would look for pitted ones so you can just dump them in)
2 cups of oatmeal (if you are gluten free make sure you get gluten free oatmeal)
1/2 cup of coconut oil
Optional: We added 1/2 a bag of Enjoy Life Chocolate Chips. You could also add 1/2 a cup of walnuts.
Preheat oven to 350 degrees. Pour all ingredients into blender (we use our Ninja) and blend. Put a tablespoon of the dough on a greased cooked sheet, and cook for 10 to 12 minutes. Let cool for a few minutes and enjoy.
